This is what I call an "easy weeknight recipe" or a "cheater" recipe lol.. Reason being I used pre-made pulled pork... But of course if you have the time or prefer to do things yourself you can cook your own pork and shred it yourself! Flavoring of the pulled pork is a personal preference, so please feel free to substitute the Trader Joe's BBQ Pulled Pork with your own seasoned slow cooker pork! (yumm!) Another one my husband loved; a super comfort food and tastes great as leftovers the next day for his lunch too! This makes a full 9 x 13 sized portion, so cut it in half if you're only making it for 2! Will easily feed a family! Also, just a side note; next time I make this I will add a little extra heavy cream or even some milk, to keep it a little creamier... but again, that's a personal preference :) INGREDIENTS 16 oz Prepared Pulled Pork (I use Trader Joe's BBQ Pulled Pork) ** 1 Cup BBQ Sauce (ONLY IF YOU ARE MAKING YOUR OWN PULLED PORK) 1 pound of pasta (I used traditional elbow pasta, but use any small kind) 5 cups three cheese blend (I used two different Trader Joe's kinds, see picture), divided 4 oz Cream Cheese (Room Temperature, soft) 2 Cups Heavy Cream (or more depending on your preference) 1 Tsp Garlic Powder 1 Tsp Mustard Powder ¼ cup Panko Bread Crumbs 2 TBSP Flour DIRECTIONS Preheat oven to 350 F. Boil water and cook pasta (al dente) as per packaging, in a large stock pot. Drain well and rinse gently with cold water to stop the pasta from cooking further. Put drained pasta back in stock pot and add Cream Cheese, Heavy Cream, Garlic Powder and Mustard Powder until well blended. Add Bread Crumbs and Flour until well blended. Add (4) Cups of Shredded Cheese (I used 2 Cups of each cheese blend) and try to evenly distribute as well as possible. Pour into a greased 9 x 13 glass cooking pan and bake for 20 minutes. While waiting, prepare the Trader Joe's Pulled Pork as per the package. If you are making your own pulled pork, add (1) Cup of BBQ sauce to the pork. Make sure pork is warm before next step. Remove from oven, top with Prepared Pulled Pork and sprinkle remaining Cup of Cheese on top, put back in oven and bake for an additional 10 minutes (or until Cheese is melted) Enjoy!
